A restaurant group with several award-winning venues is taking expressions of interest for the Head Chef of an upscale Modern Japanese restaurant for fine dining, set to open in central Sydney in mid 2027 within a prestigious new development.
The Head Chef would lead the brigade and work with the Executive Chef to set exceptional culinary standards and build the restaurant's reputation. The group is after a self-assured but humble leader who puts teamwork first, respects every colleague and has no tolerance for bullying or intimidation in the kitchen. Visa sponsorship is considered for exceptional international candidates.

Key Responsibilities
- Guide, mentor and energise the whole brigade
- Shape menus and new ideas with the Executive Chef, and make sure dishes are executed to a standard that guests remember
- Take responsibility for every part of the kitchen, from sushi and robata to omakase, à la carte and private dining
- Keep a tight grip on food costs, labour, purchasing, budgets, rosters, stock and profit
- Hire, train and develop chefs, hold them accountable, and keep hygiene, food safety and compliance at the highest standard in a kitchen built on respect
Requirements & Eligibility
- Senior leadership experience, proven, in acclaimed Japanese premium-dining restaurants or internationally recognised hospitality groups, with time at renowned restaurants of comparable calibre highly regarded
- Exceptional knowledge of Japanese cooking, technical ability and attention to detail
- A strong commercial understanding of kitchen financial performance, food and labour costs
- A demonstrated ability to develop, motivate and retain outstanding kitchen teams
- Excellent communication, organisation and leadership skills, plus a calm, composed and professional approach under pressure
