Head Chef
Visa sponsorship
Hospitality · Gold Coast, QLD, Australia · Full-Time · Discussed at interview · Visa: Employer sponsored
The Gold Coast is the setting for a Head Chef opening that covers two neighbouring venues run by the same hospitality group: an award-winning, American-style tap and grill house famous for its slow-smoked BBQ, premium grilled steaks and burgers, and a 1920s-style cocktail lounge with a premium tapas menu for sharing and private functions. You would report to the Executive Chef.
The group welcomes candidates who need visa sponsorship and says it will support the right person through that process where applicable.
Head chefs are hired on results, so your CV should show them: kitchens you have led, how you handled a busy service, how you kept food and labour costs on budget and the menus you built. Chefs in Nairobi or Mombasa can include hotel kitchen leadership. Build AI CV can help you set out that track record.
Key Responsibilities
- Shape the menus at both venues, rotating in seasonal specials and fresh dishes while keeping cost in view
- Lead the brigade of sous chefs, cooks and kitchen hands, building them up through training and honest feedback
- Supervise prep and cooking, work the grill and smoker yourself and jump onto the line in a rush
- Make sure every plate leaving the pass is consistent in taste, appearance, quality and portion size
- Keep the kitchen clean, tidy and safe, upholding hygiene, allergen and food safety standards
- Order and store stock carefully to cut waste, and keep a close eye on food and labour spend against the budget
- Roster the team across lunch, dinner and late-night service

- Follow industry trends and pick up new techniques
